Homemade Lavender Jam

Here is a short and simple recipe for lavender jam:

First, prepare about 2 cups of fruit (such as apricots or peaches), chopped into small pieces.

Next, add the fruit to a pot with about 1 cup of sugar and 1–2 teaspoons of dried culinary lavender. Cook the mixture over low heat, stirring occasionally, until the fruit softens and thickens into a jam-like consistency. Add a little lemon juice for freshness and better preservation. Finally, pour the hot jam into clean jars, seal them, and let them cool.

When preparing lavender jam, special attention should be paid to the high sugar content, especially for people with diabetes. Traditional recipes use large amounts of sugar, which may not be suitable for those who need to control their blood sugar levels.

As an alternative, reduced-sugar versions can be made using sweeteners such as stevia or erythritol, or by using naturally sweet fruits and less added sugar. However, lower sugar content may affect both the texture and shelf life, so the jam should be stored in the refrigerator and consumed more quickly.
