Why Are Elderberries So Dark?

The deep purple-black colour of ripe elderberries is not just decorative – it tells us something about their chemistry.

Elderberries are particularly rich in natural plant pigments called anthocyanins. Among the most characteristic are cyanidin compounds, including cyanidin 3-O-sambubioside and cyanidin 3-O-glucoside.

Anthocyanins are responsible for many of the red, purple and blue colours found in fruits and vegetables. In elderberries, they are also among the compounds most closely studied for their antioxidant and anti-inflammatory properties.

But here is the interesting part: the flowers growing on the very same elder plant have a quite different chemical profile. Elderflowers are not rich in these dark anthocyanins. Instead, other polyphenols and flavonoids dominate.

So when the white elderflowers turn into clusters of almost black berries, the change is much more than visual: the plant is giving us a chemically different material to work with.
